Vineyard Management: 

The grapes are harvested by hand, with sorting and selection performed in the vineyard, and they arrive at the winery “on the vine.”

Vinification :

High-quality stainless steel destemmer for separating the berries from the stems. Tank stands for small-batch fermentation and foot-treading. The wine is racked after about eight days, then stored on its lees in tanks throughout the winter, followed by bottling in the spring.
