Every year during winter, we distill the white wines made from Ugni Blanc grapes, which we harvested by hand, in our still at the estate; and the resulting Eau de Vie is aged in Limousin oak barrels for several years…
“The Angels” Share” :
In Charente, this is the term used to describe the portion of the eaux-de-vie that evaporates during barrel aging (3% per year)
Aging
Aging takes place in old, dark, and humid cellars. A mysterious and calm atmosphere reigns there, with the Cognac releasing subtle, rounder, fresher, and fruitier aromas in contact with the wood.
