Distillation
After being harvested by hand, our white wines are distilled in a Charentais still (double distillation) on the estate, and the brandy is aged in Limousin oak barrels for many years.
Aging :
Aging takes place in old, dark, and damp cellars. A mysterious and calm atmosphere reigns there, and as the Cognac comes into contact with the wood, its lively, fruity aromas transform into subtle, rounder, and smoother scents, with notes of vanilla, licorice, and more…
